Lentil Quinoa Salad

From Vega:

1/4 cup minced onion
1/4 cup diced cucumber
1/4 cup diced carrot

1/2 cup diced pepper (we used yellow)
1/2 cup cooked lentils

Dressing:
2 tbsp lime juice
3 tbsp Vega Antioxidant Omega Oil Blend: http://bit.ly/NloErN
1 Garlic clove
1 tbsp mustard
Salt and pepper to taste

Zucchi~getti

2 medium zucchinis (cut in spiral slicer)

2 cups raw hemp seed nuts (hulled)
3 tsps Nama Shoyu (or miso, miso tamari, or Celtic sea salt) to taste
3 leaves sage
1 sprig rosemary
1 clove garlic
1/2 tsp peppercorn
1 tsp raw hemp or olive oil
juice of two lemons

Add all ingredients in bowl, toss well and enjoy the nourishing effects on your body with these wonderful ingredients!
